What's Cooking on the Grill? These Days, It's Anything and Everything

Appetizers. Main dishes. Desserts.

You name it, Shirley Torkelson grills it. She was cooking up tasty treats recently for visitors on Weber Grills demo day at Southwest Fireplace in Palos Park.

And she was sharing some of her favorite grilling recipes, too. Here are two of the recipes:

Blueberry Bread

Ingredient list: 2 eggs, beaten, ½-cup vegetable oil, 3 cups flower, 1 cup sugar, 2 tsp. baking powder, 1 tsp. baking soda, 1 cup crushed pineapple with juice, 2 cups fresh or frozen blueberries, 1 cup milk, 1 tsp. vanilla, 1 tsp. salt, ½-cup chopped nuts.

How-to-make: Mix eggs and sugar together, add oil and mix; add remaining ingredients and mix well.

Cooking instructions: Cook in loaf pans on grill using indirect method on medium heat (or in conventional oven at 375 degrees) for 35-45 minutes or until toothpick inserted in center comes out clean. Makes 2½ loaves.

Salmon Loaf

Ingredient list: 6-oz. package of croutons, 1-pound can of red salmon, flaked (or use canned pink salmon), ½-cup green pepper, chopped, ¼-cup onion, chopped, 4 large eggs, 2 cups milk, 1 can (10¾-oz.) mushroom soup, 2 tbsp. parmesan cheese, grated (for topping).

How-to-make: Lightly brown onions and peppers and allow to cool. Spray 9x12 pan with cooking spray. In a bowl, mix together all ingredients except the cheese. Pour mixture into the 9x12 pan and sprinkle cheese on top.

Cooking instructions: Bake about 45 minutes on medium indirect heat on grill (350-degree conventional oven).
